Our First Post!

Asian Panko Crusted Salmon

Went to Sam's today to stock up and since we aren't big fans of the chicken there, we opted for a big piece of salmon!   That naturally started the debate around how to prepare dinner tonight.   My first reaction was Asian, Jo was thinking that my first reaction is always Asian lol.   I remembered Ina cooking up salmon with a bunch of asian sauces and panko bread crumbs so that is the direction we took!  

Put salmon filets in a shallow bath consisting of soy sauce, fresh ginger, fresh garlic and a squeeze of lemon and let them soak for 10-15 mins.  Then tossed them in Panko bread crumbs and cooked them for around 10 mins or so at 400 degrees.  


Sides:  Sauteed spinach with some garlic, olive oil, white wine and lemon.  I went for some teriyaki rice while Jo (who thinks rice is so fattening) opted for some roasted sweet potatoes and carrots. 

Definitely would do this again.   Salmon was very moist and the Panko added texture.  Dinner was very light and healthy.   It was also very simple to make and didn't require a ton of clean up (my job).  We are trying to start a diet today so this was a great start!   Unfortunately Reed remains uninterested in our food and prefers Chef Boyardee...

He prefers to feed himself these days...
